Pad Kee Mao

Alright y’all. Something different from the last two food posts but I recently had a potluck dinner with friends and I bought Pad Kee Mao. They all asked how I made the dish and so I’m going to share it here with y’all too.

Below is the recipe I went off of from Oh So Delicioso (link below); I changed some things because I didn’t have everything and I was cooking rather late at night. I highly recommend getting the chili garlic sauce instead of using sriracha. The chili garlic sauce, in my opinion, gives the dish a spicy that you won’t get from just sriracha only.

The items I changed are as listed:
* 2 tablespoons Oyster sauce – 2 tablespoons of sweet soy sauce
* 2 roma tomatoes – 2 red bell peppers
* 2-3 chicken breasts – 1 1/2 packages of Morning star chik’n strips^^
* I added 3 – 4 serrano peppers to give it a little kick.

One thing I wished I had done differently was instead of throwing the Serrano peppers in with the bell peppers and the broccoli was throwing it into the sauce and letting it sit there while it marinated, for a extra kick. Giving that I did throw it in the pan with the vegetables, so even so there was a slight surprise after every few bites.

Of course, you don’t have to throw in Serrano peppers, you can use Thai peppers or no peppers at all!

On to the noodles! The noodles I used were from H-Mart, they were XL noodles. I tried looking for these size noodles at my local grocery store but couldn’t find them – even when I went to the international section. I believe that you can use any type of noodles but these thicker noodles are what make the Pad Kee Mao what it is.
You need to cook the noodles; I’ve done it one other way where you simply soak the noodles in hot water for about an hour (I had to keep the hot water running) and they weren’t fully cooked through.

Something I noticed when I did this was I shouldn’t have cooked my noodles all the way through. When I threw the noodles into the pot with the rest of the ingredients and the remaining sauce, the noodles started breaking up and granted everyone didn’t really care to much, it was about the presentation to me.

I didn’t necessarily follow the recipe when it came to the directions either. I took about half my sauce and cooked the vegetables and meat substitute first. Making sure they were all nicely coated, I tossed in the noodles and added the remaining sauce. I continued to toss everything together until the noodles were all coated. Taking it off the heat and it was ready to serve!
